No, they’re not actually wings for bandits, it’s just a name that’s used to describe their appearance. If you’ve ever been to Tam Jai in Hong Kong (a very popular noodle restaurant), you’ll know that this is their signature side dish (土匪雞翼), but we’re making them CRISPY today, with an air fryer (or you can pan fry or bake them in the oven).
You know you HAVE to get this dish whenever you’re at Tam Jai in Hong Kong. You can’t just skip out on it. I know, we don’t always have the chance to fly to Hong Kong to try it, but don’t worry, I got you. They’re actually very easy to make at home, and there are three ways you can cook them: air fry/pan fry/bake. The crucial ingredients are the cumin and black sesame seeds. These wings are known for their cumin spices, and nutty flavours from the black sesame seeds.

Ingredients
Seasoning:
- 12 mid-joint chicken wings
- 2 tsp cumin
- 1 tsp chicken powder
- 1 tsp garlic powder
- 1 tsp Chinese five spice powder
- 1 tsp sugar
- 1/2 tsp chili powder
- Few cracks of freshly cracked pepper
- 2 tbsp oyster sauce
- 2 tsp chinese cooking wine
- 1 tsp sesame oil
Coating:
- 1/3 cup all purpose flour
- Vegetable oil
- 2 tbsp black sesame seeds
- 1 tsp cumin
- 1/2 tsp chili powder
Instructions
Seasoning:
In a large bowl, combine together all the ingredients and cover and marinate for at least one hour in the refrigerator, or overnight for more flavour.
Coating and Frying:
1. Preheat the air fryer to 375°F.
2. Coat the marinated wings with flour, dust off the excess. Place in your air fryer basket/tray and lightly dab oil on each wing evenly with a brush. Air fry for 10 mins. Remove, and flip over the wings and dab oil on each wing evenly. Air fry for 8-10 mins, until it’s cooked through. (You can also pan fry them instead of air frying, or bake them in the oven at 400°F for 15 minutes).
3. In a clean pan over medium-low heat (don’t add any oil), pan fry the black sesame seeds, cumin, and chili powder for about 2 mins. Add in the cooked wings and combine everything together. Serve and enjoy!
