Boil ramen noodles according to package instructions.
While the noodles are cooking, add the olive oil to a pan over medium heat. Add in the onion and garlic and cook until fragrant. Then add in the mushrooms and season with thyme, garlic powder, and red pepper flakes. Cook for about a minute.
Pour in the white wine and mix everything together. Then add in the milk and mix. Season with salt and pepper.
Drain the noodles and add to the pan, followed by the toppings packet (included with the ramen package) and toss everything to combine.
Turn off the heat and toss the noodles with the cheese until creamy. Serve and enjoy!
