Still don’t know what to have for Valentine’s day yet? Well I got you covered! This is literally the easiest pasta ever, and the heart pasta will just wow your s/o, or whoever you’ll be making this for (including yourself).
I was shopping at Winners one day, and suddenly saw this heart-shaped pasta. YES, HEART-SHAPED. Isn’t it the most adorable thing ever? I knew I had to create a recipe with it. I know making a pink/red sauce with it will cause the hearts to lose its colours, but it’s okay, we can still see the shapes of these little hearts.
Roasted garlic just makes the pasta so heavenly. I always get that satisfying feeling when I squeeze out all that garlic from the roasted garlic bulb, as the smell of roasted garlic just gives out the message that something good is cooking in the kitchen. When you mash it and add it to your dishes, it somehow makes the dish taste so much better with all those garlicky flavours.
Easy, delicious, and presentable. Not to mention, cute. (Has the term, “cute”, ever been used to describe food!?)
Ingredients
- 2 servings of heart pasta (or any pasta)
- 2 tbsp olive oil
- 1 head of garlic
- 1/2 of a large onion (finely chopped)
- 1 medium tomato (diced)
- 1/2 tsp red pepper flakes
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/4 cup rose wine (optional)
- 1/2 cup marinara sauce
- 1 cup heavy cream (or sub coconut milk)
- 1/4 cup parmesan cheese (grated)
- Salt & pepper to taste
- Fresh chopped parsley (for garnish)
Instructions
1. Preheat the oven to 400°F.
2. Chop off the top of the garlic head and drizzle 1 tbsp olive oil on the top. Wrap in foil and bake in the oven for 35 minutes. Let cool and squeeze out garlic cloves and mash it. Set aside.
3. Bring a large pot of salted water to a boil and cook pasta according to pasta instructions.
4. In a large skillet over medium heat, heat up the remaining 1 tbsp of olive oil. Add the onion and cook until translucent. Then add in the tomato, red pepper flakes, and herbs, and cook for about a minute. Add in the wine (optional) and cook for another 1-2 minutes, until most of the liquid has evaporated.
5. Add in the marinara sauce, heavy cream and the baked garlic mash, and bring it to a boil. Season with salt & pepper. Turn off the heat and add in the cooked pasta and parmesan. Mix to combine.
6. Garnish with parsley and more parmesan and serve!
